    Yuma Takahashi

    Born in Niigata City, Niigata Prefecture, Yuma honed his skills at restaurants throughout Niigata before spending ten years at Umi no Yōkan Nelson no Niwa in Niigata City.
    He was awarded the Bronze Egg at RED U-35 2022.
    With the belief that “food becomes a cherished memory,” he welcomes each guest with sincerity. Using seasonal ingredients from Yakushima, along with carefully selected produce from Kyushu and across Japan, he elevates them into dishes that can only be experienced here. Whether at breakfast, lunch, or dinner, he hopes guests will feel the essence of Yakushima through each meal. He looks forward to welcoming you with cuisine that becomes a lasting memory of your journey.
