
As we are surrounded by nature, we create our menus with the concept of providing flavorful ingredients only available here and reminiscent of Yakushima in mind. sankara has its own vegetable garden on the premises and vegetables are grown there. I am honored as a chef to be able to work in an environment where I can just go out and pick small fruits that are still growing, as well as leaves and seeds to use in the cooking. Yakushima also boasts many wild plants, including bracken and Japanese silver leaf. We will continue to provide ingredients found naturally here every season in a way that guests can feel the spirit of Yakushima.
